The most prominent phenols in EVOO are hydroxytyrosol, tyrosol, and oleocanthal. Early-harvest Kalinjot olives yield extremely high phenolic levels, but lower quantities of olive oil — making them rare and valuable.

1. Early Harvest
Kalinjot olives are picked in October when polyphenol levels peak. Green, “unripe” olives yield less oil but maximum antioxidants, giving them a peppery kick.
2. Fast Milling
Within 3 just hours of hand-picking, olives are crushed as soon as possible to prevent oxidation. Speed is critical to preserve delicate polyphenols.
3. Cold Extraction
Mechanical pressing below 27°C preserves heat-sensitive compounds. No chemicals, no heat damage.
4. Underground Storage
Oil rests in temperature-controlled underground tanks, protected from light and air until bottling.
